THE APPLICATION OF THE CLASSICAL ABC-ANALYSIS TO ANALYZE THE RANGE OF DISHES AT THE CAFÉ

Abstract
This article reveals the essence of the actions of the ABC-analysis in organization engaged in catering. Produced by ABC-analysis of the menu of the dishes prepared in the restaurant, to be implemented through the café. Conclusions to ensure that the database provided by the organization, to improve the offerings. The analysis can be used in organizations that are engaged in selling food, and to teach students the elements of analysis of the product range.
